Chicken Wing with Cordyceps Flower

蟲草花炆雞翼


If you’re into improving your health and having delicious food, this is a recipe for you. These wings are accompanied with cordycep flowers, a type of cordyceps known as cordyceps militaris. Unlike its counterpart, Cordyceps sinensis, which is comparable in benefits and definitely different in price point. These are delicious to go with your everyday dishes.

Mrs. Yung demonstrates an easy recipe with chicken wings. Usually this dish is made with chopped up chicken pieces. For convenience, chicken wings are a great option. Feel free to use either pieces or wings, whichever tickles your fancy. 

Ingredients:
0.45 kg (1lb) Chicken Wings
30g Cordyceps Flower
1 stalk green onion chopped
1 shallot chopped 
1 ginger slice

Marinade:
¼ tsp salt
½ tbsp light soy sauce
½ tsp cornstarch

Seasoning:
250ml (1 cup) water
½ tbsp oyster sauce
½ tsp dark soy sauce
½ tsp sugar
½ tsp chicken powder
Sesame oil a dash
White Pepper a dash

Method:

  1. Soak cordyceps flowers in water for about 1 hour. Pour in sieve, rinse under fresh water and let drip dry.

  2. Wash chicken wings and pat dry. Add marinade ingredients and let marinate for 30 minutes.

  3. Heat 2 tbsp oil, medium high heat, saute chicken wings until golden on both sides.

  4. Medium high heat, saute shallots and ginger slice in the middle of the pan. Stir fry together and add cooking wine. Add seasoning ingredients and let boil with the lid on. In low heat, add cordyceps and let cook for 8-10 minutes (depending on wing size) with lid on. Add green onions, mix and it’s ready to serve.

Note:

  • We used frozen abalones because they are more common locally. Feel free to use fresh ones if it’s available to you.

  • Frozen abalones are easier to remove from their shells and innards. Once cleaned, discard the guts. Yes, the guts make up a large portion of the abalone. After removal and cleaning, you’re left with a much smaller than expected product.

  • Some frozen abalones comes pre-cleaned and gutted for use.

  • Abalone guts can be consumed. This is something we’re not familiar with. For this recipe, we do not use them.

Cordyceps Flowers:

1. What are cordyceps flowers? They are actually called cordyceps militaris, a type of fungus (mushroom). Cordyceps are more commonly used in Chinese soups and steam dishes. 

2. These orange fungus are usually sold dried, packaged in bags at most Asian markets. 

3. Cordyceps flower (cordyceps militaris) is not the more commonly known Cordyceps sinensis, which is at an absolutely different price point. Cordyceps sinensis are grown wild in the Himalayan foothills of Tibet and Bhutan. Cordyceps flowers are at a much more valued price point and still reaps benefits.

  • More energy

  • Improved endurance

  • Better stamina

蟲草花炆雞翼

蟲草花炆雞翼好吃又超級容易做!

材料:
鷄翼 0.45kg (1lb)
蟲草花30克
蔥1條切段
乾蔥1粒切碎
薑1片

醃料:
糖1/4茶匙
生抽半湯匙
生粉半茶匙

調味料:
水半杯
蠔油半湯匙
老抽半茶匙
糖半茶匙
雞粉半茶匙
麻油少許
白胡椒粉少許

做法:

  1. 蟲草花用水浸約1小時洗淨揸乾。

  2. 雞翼洗淨抹乾,加醃料醃30分鐘。

  3. 燒熱2湯匙油,放鷄翼煎至兩面金黃色。

  4. 將鷄翼放鑊邊, 薑片,乾蔥放鑊中爆香,與雞翼炒勻贊酒,倒入調味料煮滾,放入蟲草花。

  5. 加蓋慢火煮8至10鐘,煮至雞翼熟,放入蔥段兜勻,即可上碟。
