Garlic & Onion Chicken Stir-Fry

蒜片洋蔥鷄塊



Flavourful and delicious. This garlic and onion chicken stir-fry is simple and easy to make.

Ingredients:

1 lb chicken (thigh or breasts)
1 large onion
5 garlic cloves
2 tbs carrot strips
1 shallot
2 ginger slices
2 stalks of spring onion

Marinade:

⅓ tsp salt
⅓ tsp sugar
½ tbs cooking wine
½ chicken bullion
1 ½ tsp cornstarch

Seasoning:

3 tbs chicken stock
½ tbs oyster sauce
1 tsp soy sauce
½ tsp sugar
A dash of sesame oil
A dash of ground white pepper

Method:

  1. Wash, dry and remove excess fats from chicken. Cut chicken into pieces, add marinade ingredients and mix well. Let chicken marinade for at least 15 minutes.

  2. Cut carrots into strips and onion into quarters (or any size and shape to your liking).

  3. Heat 3 tbs of oil and brown chicken on both sides. Remove and set aside.

  4. Stir-fry garlic, scallion, and onion to bring out the flavour. Add chicken and mix well. Pour in premixed seasoning and let cook for a little, add in baby corn and spring onion and it’s ready to serve.


這道香蒜洋蔥妙雞不但做法簡易,而且有濃濃的洋蔥和蒜香味。

材料:

鷄肶肉1磅 
大洋蔥1只切粗𢇃
蒜肉5粒切片
甘筍𢇃2湯匙
乾蔥1粒切片
青蔥2條切段
蔥2條切段

醃料:

鹽1/3茶匙
糖1/3茶匙
酒半湯匙
鷄粉半茶匙
生粉1 1/2茶匙

調味:

上湯3湯匙
蠔油半湯匙
生抽1茶匙
糖1/3茶匙
麻油胡椒粉各少許許

做法:

  1. 雞肶肉洗淨抹幹,剪去肥肉,切萡片狀,加醃料撈勻,醃15分鐘

  2. 燒熱3湯匙油,放雞塊煎至兩面微黃色取出

  3. 加油少許爆香蒜片,乾蔥,洋蔥𢇁,放入雞塊炒勻賛酒,倒入調味煮片刻,最後加甘筍𢇁,蔥段兜勻,即可上𥐙供食。
