Shrimp With Edamame

毛豆炒蝦球

Are shrimp your thing? Edamame your favourite? Let’s combine them into one delicious and easy to make shrimp with edamame dish!

Ingredients:
10 oz medium size shrimps
1 cup edamame (fresh or frozen)
1 tsp shallots
½ tsp finely diced ginger

Marinade:

⅓ tsp salt
1 egg white
A dash of ground white pepper
2 tsp cornstarch

Seasoning:

3 tbs chicken stock
⅛ tsp salt
¼ tsp sugar
⅓ tsp cornstarch
A dash of sesame oil
A dash of ground white pepper

Method:

  1. Devein shrimp, wash and dry shrimp. Add marinade ingredients and set shrimps aside. 

  2. You may use frozen or fresh Edamame. Whichever that is more available for you. If you’re using frozen edamame, defrost - rinse and drain edamame.

  3. Heat up 6 tbs oil in a pan add shrimp and let fry. Pan fry shrimp until 80% cooked, remove and drain oil. 

  4. In a hot pan, use 1 tbs oil. Add in shallots and ginger, let cook a to bring out the flavour. Add edamame and shrimp, stir fry together and use a few dashes of cooking wine to enhance flavour. Add in mixed seasoning, stir-fry till liquid reduces and the dish is ready to serve.

Note:

  • It is common to find frozen, devein and de-shelled ready to use shrimps in North America. We usually get those ones from a store that sells them in bulk for convenience.

做法:

  1. 將蝦挑去腸冲洗浄抹乾水份,加入醃料撈匀略醃。

  2. 毛豆解凍冲淨瀝干水份。

  3. 燒熱6湯匙油放入中蝦泡油,泡至8成熟取出滴去油份。 

  4. 倒出泡蝦油留回1湯匙油,放乾蔥茸,𦍑茸爆香,加毛豆炒匀將蝦球回鑊賛酒,倒入調味料快手 兜匀, 即可 上碟。
